Carrot cake with coconut and walnut
INGREDIENTS
  • 3 med-large carrots, grated
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 cups almond flour
  • 3 eggs
  • ¾ cup chopped walnuts
  • ¼ cup honey
  • 3 ripe bananas, mashed
  • ½ cup coconut milk
  • 1 cup flaked coconut
  • 2 ½ tsp baking powder
How to Prepare
Take a large bowl and mix the almond flour with salt, baking powder and cinnamon

Now take the coconut, walnuts and carrots and mix them. Set them aside after that

Take another bowl and fill it with a mix of maple syrup, coconut milk, bananas, eggs Now add the dry ingredients and wet ingredients and stir

Once that is done, transfer the batter to a greased, parchment-lined loaf pan (9x5x3)

Bake the whole mix at 180 degrees for 50 minutes or till a toothpick comes out clean when inserted in the center

Allow it to cool
